Caesar Dressing

Straight from my father. He's wowed both guests and I with this special caesar dressing. Add in croutons fried in olive oil for extra effect. Enough dressing for 2-4 people.

  • 2 anchovie fillets chopped fine
  • 1 raw egg
  • 1 - 2 tbsp olive oil
  • 1/4 lemon juice or 2 tbsp balsamic vinegar
  • 1 garlic cloves
  • salt and pepper
  • whostere sauce
  • 2 - 3 tbsp parmesan cheese

Using preferably a wooden bowl, rub a garlic clove around the inside of the bowl to seed with flavour. Combine remaining ingredients in bottom of the bowl. Be sure to mash anchovie fillets until in a paste. Finish with romaine lettuce and fry up small bread chunks in olive oil, salt and pepper for croutons.
